The Bellini cocktail

The famous Bellini cocktail was in fact invented by Giuseppe Cipriani, and to this day, it remains the most popular Italian cocktail, and the most popular champagne cocktail in the world (even though it is made with Italian Prosecco) and it has over time, become the symbol of Harry’s Bar.

Serves 1

  • 50ml or ¼ cup of ice-cold white peach puree
  • 150ml or ¾ cup of well chilled Prosecco di Conegliano

Put the puree in a very cool glass, top up with Prosecco, stir quickly and serve immediately.

    I love Bellinis! I should make them at home, I hardly find them in bars!
