The Rossini cocktail

Remember the famous Bellini cocktail? Well, here is another Italian cocktail, also with a wine base that you will love. This one uses strawberries instead of peaches, but the general idea is pretty much the same.


You will need 1/3 cup of strawberries and 2/3 cup of sparkling white wine. Note that both the strawberries and the wine should be as cold as possible. And the same goes for the glass.

Wash and hull strawberries very well; purée in a blender or food processor until smooth, and pass through a sieve, if desired.
Pour the chilled strawberry purée into a flute (1/3) and then add chilled sparkling wine (2/3).
The cocktail is ready to serve.
